If you know me, you know that I usually stick to Mediterranean-inspired recipes, but ever since moving to the US over 20 years ago, canned black beans have become a pantry staple in my kitchen.

With just a can of beans and a few fresh ingredients like corn, tomatoes, and radishes, you can pull together a meal that’s colorful, satisfying, and ready in no time.

Here are a few black bean recipes I love when I need something quick, fresh, and homemade.

Make the most of that can of beans

Before I let you go, here are a few helpful tips to help you get the best results when using canned beans in your summer cooking.

  • Rinse and drain well: It is obvious, but unless you are making it a chili, you want to make sure to rinse and drain well.
  • Look for low-sodium or no-salt-added cans: That way, you’re in control of the seasoning.
  • Give them a gentle stir: Black beans can be delicate, especially after rinsing. Stir gently so they stay whole and don’t turn to mush.
