Do you remember the DIY Cava Bowl Recipe I shared last year? It quickly became one of the most popular recipes on the blog and on my YouTube channel, thanks to the how-to video I shared.

And, that is my friends, for good reason, because it's fresh, filling, and packed with all the bright Mediterranean flavors we love.

Also, let's face it, it's also more budget-friendly than takeout and perfect for meal prep.

Wait, You Need A Drink with That Order

​

Well, I couldn't resist creating the perfect sidekick to that bowl.

​

Say hello to my CAVA's Copycat Cucumber Mint Lime Drink. If you've ever sipped their cult favorite refresher, you know why it has a fan club of its own.

​

Now, making this recipe was a whole story on its own. I started with a base of lime juice, almost like making a classic limeade. At first, I blended cucumber juice, lime juice, and a bit of simple syrup. It was good, but honestly, it just tasted like limeade.

Nothing memorable.

​

Then I stumbled on a tip about enhancing limeade with lime zest and a splash of lemon juice.

​

That little trick was golden.

​

Those two small additions completely transformed my simple drink into something bright, layered, and refreshing. And more importantly, it tasted just like the version I love at CAVA.

​

Though I'll admit, I think my version is even better. Fresh ingredients like organic limes, lemons, and homemade honey syrup really take it up a notch.

A Couple of Good To Know Tips

  • Make Ahead: You can make this drink a day or two ahead, in case you are planning to serve it to a crowd or want to have it in the fridge to sip on throughout the week.
  • Simple Syrup: I steeped a handful of mint in my honey simple syrup to make my drink naturally sweetened. If you want, you can make a regular (granulated sugar) simple syrup as well.
  • Get more life out of it: I doubt you'll have leftovers, but if you do, pour it into silicon ice cubes for a refreshing addition to your water for later.
  • Turn it into a cocktail: Add a shot of gin, vodka, or even tequila to turn it into a happy hour cocktail.
