So today I’m sharing my foolproof tips for cooking eggplant (and yes, eggplant parm!) in one of the greatest kitchen inventions of our time: the air fryer.
Once your breaded eggplant is cooked, the rest is just a few quick steps. Top with tomato sauce, add the cheese, pop them back in the air fryer, and voilà, no oil, no mess, eggplant parm.
