To me, summer truly starts when I see fresh corn at the farmer's market.

Corn Secrets from the Kitchen Pros

Corn is full of little surprises once you get to know it. Here are a few tips thatโ€™ll make you feel like a total pro next time you're knee-deep in corn.

โ€‹

  • Silks = flavor clue. The silk at the top of the ear tells you a lot. Look for strands that are golden and a little sticky. If theyโ€™re dry or turning black, skip it.
  • Microwave trick for easy husking. Toss a whole ear (husk and all) in the microwave for 2 to 3 minutes. Let it cool slightly, then squeeze from the base. The husk and silk slide right off like magic.
  • A Bundt pan = the best corn shucker. Stand the cob upright in the center hole and slice downward. The kernels fall right into the pan. No mess, no flying kernels!
  • Raw corn is totally delicious. You donโ€™t even need to cook it. Fresh corn straight off the cob adds a sweet crunch to salads, salsas, or even sprinkled over avocado toast.
